dc.description.abstract Jack i s a large ever green tree grown in tropical and warm subtropical regions. The fruit is very large but has a thick, hard and prickly rind, and only small portion o f the fruit is edible flesh. Thearil surrounds each seed.Edible bulbs,contain water 73.1%, carbohydrate 23.4%, protein and fa t 0.6% Seeds contain water 51.6% carbohydrate 36.4%, protein 6.6%, and fa t 0.4%.Jackfruit mostly consumed fresh, but can be cooked, canned, dried or made in to jam, jelly etc. Various products can be made from different parts of ripe and raw jack fruit Jack fr u it i s also used as a staple food in periods o f food scarcity But, lossess of the jack fr u its can be occured highly due to various reasons. Presently there i s a great demand forinstant food in developed countries as well as in developing countries So that instant jack bulb meed can be introduced to the market, for the consumers those who are interested in instant foods. en_US
